Hmm, that's difficult.

I would say the first character I would choose to have a "dinner date" with would be Fate Testarossa from Magical Girl Lyrical Nanoha. I'd like to discuss the workings of magic, the many adventures I'm sure she's been on and places she's seen. Different societies she's experienced. I'd like to talk about the past, and how she's managed to make herself a better person despite all the trauma she's experienced.

I'd also like to take MacGyver on a dinner date. I would find his in-depth knowledge of ... everything to be fascinating. And to listen to how he knows all the quirky facts he knows would be very interesting.

Another person I would like to take out to dinner would be Ranma Saotome. It must be wild to always be living on the edge, to know that any moment, you could be transformed from a boy into a girl, and having to live within society like that, to have to become an expert at both social roles. That, and it would be awesome to learn some of his/her martial arts techniques.

I would have to go with Princess Ayaka, I thought she was hot growing up! so It would have to be a dinner date. Next would have to be Rias Grimery from High School DxD because I think being a demon under her watch would be cool! and last but not least would be Karumi from Date A Live! She can torture me any day! Yes, typical guy horn dog aspect but hey! we can dream?
